I was such a princess when I was young. Who am I kidding? I am still a princess and these s’mores fit the princess in me. Sure, we can grab our graham crackers and Hershey bars and fake marshmallows and toss them into the microwave – but these, were meant for a princess. They are so pretty.
Ok, Friday means weekend. Weekend means treats and something yummy, and very often that has a connection with chocolate…
S’mores Cookies… Oh là là is all I can say… here is the recipe, enjoy.
S’mores Cookies (yield: approx. 20)
For the cookies:
- 1/2 cup (100 g) light brown soft sugar
- 3/4 cup (170 g) usalted butter
- 2 tablespoons honey
- 1 1/2 cup (190 g) all-purpose flour
- 1/4 cup (40 g) graham flour (wholewheat flour)
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
Filling:
- White cloud frosting
- 3 1/2 oz. (100 g) dark chocolate
Put the butter, sugar and honey into a mixing bowl and beat until smooth.
Sift in both flours, salt and cinnamon. Stir until everything is well blended.
Bring out two sheets of baking parchment. Place the dough between them and roll out until quite thin. (If you want your cookies to be very thin – divide the dough in two and roll out each of them between two sheets of baking parchment.)
Chill for 30-60 minutes in the refrigerator, still between the sheets of baking parchment.
Preheat the oven to 350°F/180°C.
Remove the dough from the refrigerator and use a cookie cutter to cut out the cookies.
Arrange on a lined baking tray and sprinkle with a little sugar.
Bake in the preheated oven for 10-12 minutes (don’t use the fan setting here).
Leave to cool completely.
Make the white cloud frosting (you can find the recipe here) and pipe or dollop 1-2 tablespoonfuls on top of every other cookie.
Use a blow torch to slightly scorch the topping.
Put the chocolate into a bowl and place over a pan of simmering water. Stir every now and then until melted and smooth.
Drizzle the melted chocolate over the meringue topping.
Let the chocolate fun begin…
Place another cookie on top.
Now nothing remains but to enjoy these luscious treats, and remember: sharing is caring…
