The Southern Chocolatier – Remember No-bake cookies?

I remember these no-bake cookies from childhood. We would have them about once a week in elementary school as dessert at lunch. This was the one day there was actually something my finicky little self would eat!

I came across the recipe in the Southern Living Cookbook a few years and after making them a few times, promptly forgot about it until I saw the recipe again on Facebook. These little cookies bring back so many childhood memories. I hope you’ll enjoy making them and also memories of your own.

Chocolate No Bake Cookie
Ingredients

1/2 cup butter
1/3 cup unsweetened cocoa powder
1/2 cup milk
2 cups sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 cup peanut butter
3 cups old fashioned oatmeal
Instructions

In a 2 quart saucepan, combine butter, cocoa powder, milk, sugar, and salt. Stirring constantly, bring to a rolling boil. Continue boiling for 1 minute.
Remove from heat and stir in vanilla extract and peanut butter until smooth. Fold in oatmeal to coat.
Drop by tablespoons (or use a medium cookie scoop) onto parchment paper (or wax paper) lined trays. Let cookies set up, 30-60 minutes, before storing an in airtight container.
